Executive Chef

Description

The Mambo Group in Ibiza is looking for an executive chef whose main objective is to control all the áreas related to kitchens in a qualified way, with initiative and responsibly.

Requirements

  • Minimum experience as an executive chef of 3 years, and 5 years as a head chef.
  • Formal training in hospitality and kitchens
  • Good knowledge of available products and suppliers
  • Good knowledge of kitchen machines and kitchen-layout planning
  • Technical knowledge with regards to conservation, cooking etc
  • Managements of several venues at ones

               

Specific Tasks

  • Organisation of services and resources-planning (staff, equipment, material, etc.)
  • Ordering in conjunctions with the food and beverage manager, managing suppliers, buying and costs
  • Design, creation and updating menues in the different bars, restaurants and hotels
  • Creation, control and supervision of costings and prices
  • Stock control
  • Supervision of all the kitchens with regards to compliance with hygiene and control norms
  • Design and set up of new kitchens
